This is the Hard Shell variety, which means the caviar has a noticeably firmer and tougher casing than classic Chum (Keta) salmon caviar. The grains are not soft and do not melt in the mouth; instead, they pop when bitten, providing a characteristic springy effect.
The firmer casing of the grains is a natural characteristic of the Hard Shell variety and is not a product defect. It is a fully wholesome caviar with a characteristically firm and resilient texture.
If you prefer delicate, soft caviar, please choose our standard Chum (Keta), Pink Salmon (Gorbuscha), or Trout caviar.
